Anybody have any lower fat granola recipes?

    Anybody have any lower fat granola recipes?

    I have one that I just got from a friend and LOVE... would like some more. What I like best about it (besides the taste) is the no butter/no oil recipe. I tried doing a search in my Library for a cookbook, but none was there. Here's my friend's recipe...it's wonderful...especially eaten like cereal with milk poured over the top YUMMY!!!

    Coconut Almond Granola

    2 cups uncooked rolled oats (Old fashioned)
    1 cup uncooked rolled barley or wheat flakes (health food store)
    1 cup toasted wheat germ
    3/4 cups slivered almonds
    3/4 cup firmly packed dark brown sugar
    1/2 cup shredded coconut
    1 tsp salt
    3/4 cup LIGHT coconut milk (Asian section of the grocery store)
    2 tsp pure vanilla
    1 cup golden raisins

    Preheat overn to 300 degrees. Spray a lare shallow roasting pan wtih non-stick cooking spray. In a large bowl, combine all the dry ingredients (except the raisins). In a small bowl, combine coconut milk and vanilla. Pour milk mixture into the dry ingredients and combine well. Spread into prepared pan. Bake until golden (about 60 minutes) stirring every 15 minutes. Transfer to a bowl, cool completely. Stir in raisins. Store in an airtight container for up to 3 months.

    Wow, I'm impressed. I have never seen a granola recipe without added fat.

    I don't have a no-fat granola recipe, but I do have a low-fat one. . . I have to add in all fairness this one sounds far tastier, but I'll look mine up and try to post it later in the day.

    Don't be too fooled...coconut milk has fat in it, but it's the light version and so not as much... It is good stuff though!
