    What are your "quickie" recipes?

    We had one last night... crab quesadillas. YUM!! Dh claimed we eat this more than anything else which I find hard to believe. We then talked about our other quick meals... bean burritos, spinach frittata, lentil homefries and pasts w/avocados and ham. Just curious what everyone else has for their quick standards. Maybe we could change up our routine a bit.

    super quickies

    sandwiches (real exciting)
    cereal
    spaghetti
    quesadillas
    pasta with anything and everything you could think of
    chicken with everything but the kitchen sink in it - sauteed in a pan- add some rice and nuke a veggie.
    chicken/turkey/tuna with veggies with a cream sauce over pasta

    you're not going to get any ideas here!

    Stir frys - just about any combo of just veggies or veggies and meat
    Barbecue
    quesadillas
    burritos - bean or chicken
    grilled cheese - a standby in our house
    Anything in a tortilla - we range from plain peanut butter to hummus and veggies


    I don't think there are any new ideas here either!

    I must admit that usually when I am in search of a quickie menu, I slap together some sandwiches, make some pasta, cook breakfast-type foods, or reach for a takeaway menu. . .

    Nothing too fancy here...

    burgers & tots
    black beans & rice
    omelettes
    I always have frozen pasta sauce
    cereal or popcorn
    carryout

    The other night I whipped up a quick pasta & lemon chicken dish using a previously cooked chicken breast and farfalle pasta (bowties). I heated chicken broth and whisked in light cream cheese, garlic, salt & pepper, frozen peas and matchstick carrots, lemon zest and the juice of 1 lemon. I heated the chicken in the pasta water, drained the pot & added pasta and chicken to the sauce, stirred it together and added some parmesan cheese & another squeeze of lemon. Yum!

    Our quickie meals consist of:

    Pizza (store bought or Breadeaux's)
    Mac & Cheese with hot dogs and baked beans
    Tuna Salad Sandwiches, buttered pasta and some veggie
    Spaghetti
    Breakfast - eggs, toast, bacon or biscuits & gravy, or pancakes/waffles and eggs
    or Frozen Stouffer's Lasagna

    Spaghetti (and if no sauce we add an egg, chopped sauteed onions, and cheese)

    breakfast meal (always have eggs, toast, and bacon)

    soup and sandwich (tomatoe soup and grilled cheese is great)

    wrap meal (put in leftover meat, cheese, chopped veggies)

    hot dogs baked in the oven with mac/ n' cheese (oven has so much more flavor than boiling hot dogs)

    soup and garlic parmesan toast
