    Help - lemons, lemons, lemons!

    I have at least six lemons sitting on my counter and I want to do something with them before they go bad. We had friends visiting from Arizona who have lemon and orange trees, they brought us a big bag full of fruit. I wish I had that luxury of a citrus tree in my yard!

    Now I've got a few left and need some ideas on what to make. Can I juice them and freeze the juice? Anyone do that before?

    So far I've made chicken piccata, and a chicken salad using lemon in place of vinegar in the dressing.

    Any ideas?

    Lemon meringue pie? I just love that, and it does take up lots of lemons.

    Other than that you could make fresh lemonade, always a treat, or you could freeze the juice; can't think of a reason in the world why that wouldn't work.

    They refrigerate well and last for a long time that way; I could probably use six lemons in a week or two in my cooking.

    I have a recipe for lemon pudding that's good and easy. I freeze lemon juice all the time (and zest, too - just grate it off, put in a small container and freeze for later use). Lemonade? Lemon squares? Lemon pound cake? Lemon juice is also great in the laundry - throw some juice into a load of whites to make them brighter...

    I love to mix 1/2 lemonade and 1/2 ice tea. Mmmmm! Lemonade is a treat. Frozen lemonade is great too. Sorry- I've got lemonade on the brain now!

    Here's another delicious recipe that my dad makes with lemon:


    Linguine with Garlic and Oil

    1 lb linguine
    1/4 tsp crushed red pepper
    1/2 cup chopped fresh parsely (or even more=better)

    sauce
    1/3 cup olive oil
    3 cloved crushed garlic
    1/2 tsp salt
    gently cook in covered pan until garlic is soft

    cook pasta; save 3/4 cup pasta water; do not rinse pasta

    toss drained pasta with 1.5 TBS butter, tsp grated lemon peel, 1/2 cup chopped fresh parsley, and juice of one lemon. Add pasta water (little) over low heat- it will slightly thicken. Add red pepper when serving. Top with grated fresh parmesan if you like.

    This recipe is SO yummy and so simple. My dad has also added a can of clams before and it's really tasty.
