    really lovely bleu cheese dressing

    I made this tonight--another of Bittman's winners--it was absolutely delicious, very simple, and honestly didn't take any longer than wrestling the cap off a bottle of salad dressing can take. . .

    Bleu cheese dressing

    1/2 cup bleu cheese of any kind (roquefort, gorgonzola, stilton, etc.)
    1/2 cup yogurt or sour cream
    salt and pepper to taste
    fresh lemon juice to taste

    Mix the yogurt and bleu cheese together in a bowl and mash well with a fork. Taste and add salt and pepper as needed, and a dash of lemon juice if you like.

    I found mine only needed a touch of black pepper; I added no lemon juice at all.

    It was delicious on a salad of slightly bitter greens and I think it would be a winner as a dip as well. Please give it a try!

    That does sound heavenly. Unfortunately dh does not like blue cheese and so the only time I get it is from a premade salad at our grocery store...sigh
