    Question 3 day weekend, what are YOU cooking???

    Sorry for you po fokes who haven't got Monday off! It's President's Day so us Gov employees get the day off... I've been looking through my Cooking Lights this a.m. and am pondering what to make. I'm thinking of the Ma Po Tofu recipe in the Jan/Feb issue. There are several chicken and pasta recipes that look tempting too. Heck, the whole magazine looks tempting, but I must choose something.

    So what are you guys making this weekend? Anything good?

    Good morning, Lynn!
    Tonight I'm going to make pork chops. Nothing fancy, but a well rated recipe on 'zaar. I have my eye on a few others. I just may make something new each night. I'm on a roll. I've tried a new recipe 3 nights this week.

    I'm going to roast a chicken tomorrow. I think we'll probably go out tonight. I usually make new recipes a few nights a week -- it keeps cooking interesting!

    I make new recipes for the same reason. My family always seems so eager when I'm making something new.

    Well, I don't have a three day weekend!

    We went out last night, I had chicken with grilled portabellas in a marsala sauce with garlic potatoes. It was delicious.

    This morning my neighbor brought us a ton of strawberries so I made a batch of strawberry muffins that came out really good. Tonight I'm making steak quesadillas and red beans and rice. I may go out on a limb and make some margaritas too. It hit almost 80 degress today, so I have Spring fever big time!

    We just got dome eating a stuffed pork loin-it was stuffed with stuffing, raisins, cranberries and applejuice. I just kind of made up the recipe but it turned out really moist and good!

    We haven't been around much this weekend, we've been eating on the go. But no plans for tomorrow, so I'll be making beef stew. It's supposed to be cold & snowy, the perfect kind of day to have a pot of stew simmering away .

    Coming in late on this post... and I'm at work!

    Saturday night was pork chops - a new recipe from 'zaar. The recipe called for brown sugar, onions & ketchup layered on browned chops, then baked. It was tasty, but the ketchup just baked on in lumps... wasn't the prettiest dish. I'll have to work on it. I served them with stuffing and broccoli.

    Last night, DH made pork fried rice with our leftover tenderloin and brown rice & the typical egg, veggies & flavoring. Served it with a tossed salad. Nothing too special, but it was good.

    Tonight we're having fresh tilapia. Haven't decided how I'm preparing it yet. Any ideas?

    Sunday night I made a spicy corn chowder by mixing 3 recipes.

    Last night I didnt cook, so tonight Im making up for it with either turkey piccata with au gratin potatoes or curried turkey stir fry with brown rice.
