    Texas "Caviar" Recipe

    We had this the other night at our Bible study class and it was deeelish! It's so easy to make and a good way to get in some veggies...most of the kids even liked it.

    (I'm making it soon but leaving out the bell pepper and jalapeno since the Rotel has chiles in it. Also, I'm going to add some chopped black olives too. It could even be made low-fat by subing a light version of the dressing. It's so versatile!)

    Just wanted to share!

    Texas Caviar

    2 cans black-eyed peas, drained and rinsed
    1 can shoepeg corn, drained and rinsed
    1 can Rotel (mild or spicy, depending on preference)
    12 green onions, sliced thin-tops only
    ½ bell pepper, diced
    1 fresh jalapeno or 1 can green chiles
    1 diced tomato
    1 tablespoon minced garlic
    1 small bottle Italian dressing (not the Zesty)

    Mix all ingredients and add salt and pepper to taste. Best if made 24 hours before serving.

    Serve with Frito Scoops.

    Ooooh, this sounds good. What a nice change, a dip that is veggie-based.

    I love blackeyed peas.

    But what is Rotel? Is it a salsa brand?

    Yes. Rotel is a brand of canned chopped tomatoes & chiles. For years it was the only brand I could find in the markets, but now the other canned vegetable companies have picked up on it. I am so brand loyal though, I still buy only Rotel when I want tomatoes & chiles.

    yummy! I love dips!

    My dad made a recipe with caviar in its name on New Year's Day. It was a black bean, shrimp, cilantro, and numerous other things recipe and it was served with crackers. We were wondering why it was called Caviar too. I can't remember the exact name.

    I remember an old recipe that was called Cowboy Caviar and was made with black beans. When it was made, it looked a little like caviar mounded in a dish because of the dark color. I suspect that is why some of the bean dips are called caviar because they are a spinoff of this dish.

    Cathy, you can get Rotel tomatoes in NYC now. They just started having that brand here in the last few years. What I find interesting about it is that it is referred to as "Rotel" instead of "Rotel chopped tomatoes with green chiles" or something. My sister who lives in Colorado does this. "Take a can of Rotel and mix it with the cheese in the crockpot". I figure it must be an old brand from the West somewhere.

    BTW. this dip sounds great.

    I grew up with rotel too. Although, we do usually say "rotel tomatoes" .... My parents ALWAYS have a can or several on their shelves.

    I make an almost exact recipe like this called Spicy Bean Salsa - it even looks so colorful and it is a great dish for summer. It is always a big hit. It got rave reviews on All Recipes and it tastes great the next day.
