    Pork Chops with Sauerkraut recipe

    Yes, I should have posted this ages ago: this is one way I really like to make kraut.

    The recipe calls for pork chops, but you could use pieces of pork roast or good pork sausages if you wanted.

    Pork Chops with Sauerkraut

    4 slices of bacon (optional)
    at least one pound of good quality sauerkraut
    1 large onion, sliced
    salt and pepper
    2 T butter
    4 thick pork chops
    1 finely chopped garlic clove
    beer, about 2 to 3 cups

    Arrange the bacon in the bottom of a heavy braising pan.

    Rinse the sauerkraut very well under cold running water in a colander, then squeeze out as much water as possible with your hands. Cover the bacon with half the kraut and the onion, and sprinkle with salt and pepper.

    Melt the butter in a skillet and brown the pork chops quickly on both sides over medium-high heat. When browned, arrange the meat on top of the kraut and sprinkle with the garlic. Salt and pepper it again and pour any pan juices from the saute pan over it. Add the rest of the kraut, sprinkle with a bit more pepper, and add enough beer to cover.

    Bring to a boil, reduce the heat, and simmer for one hour.

    James Beard (adopted his recipe) suggests serving this with sauteed apples, boiled or mashed potatoes, and beer to drink.
