What's on your menu for this week?

I am thinking about making some : meatloaf, pork chops, chicken and dumplings (if I can figure out how to do them!), soup--veggie or something like brocoli cheese, and one night we'll have something mexican style. I am never quiete sure what to make til the day before or the hour before dinner!

Good question. I really feel like I'm in a rut. Every week we have some version of chicken, pork chops, ground beef (meatloaf, meatballs etc..) and/or steak. I feel like my meals are getting boring, even though they taste pretty good and I prepare it differently. I'm hoping this post gives me some new ideas.

I don't know either. There are so many things I would love to try but by the time I'm home it's 6pm and I don't have time We had spaghetti last night and I made a HUGE batch so we won't have to cook for at least another day, maybe two. It seems like we have spaghetti once a week.... it's so easy and we all like it. I wish I had more time at home or got home at least 1-2 hours earlier. I may need to make something for a work potluck on Wednesday. I'm not sure if we're still having it, but if we do, maybe I'll double up and have something at home too. That is, unless I make the dips I was thinking of......

I don't really have a menu planned, but we'll prob have leftovers tonight from last night's King Ranch casserole. I'm thinking I'll prob make chicken and dumplings one night (Lauriann, if you want my recipe, I'll tell ya, it's so easy).

I've got a pork roast so I might do some chalupas, too, or bbq, one or the other, or both if my roast is big enough.

Yes, what is King Ranch casserole? How do you make Chalupas? and yes, I'd love the easy chicken and dumpling recipe (can you make it in a crockpot?)
