Waiting on the tomatoes . . . . [Salsa recipe in post 5]

. . . and waiting some more!! I have lots and lots of green ones, but need some red ones! I have New Mexico peppers coming on and am just waiting to get some tomatoes to make salsa. I have a good recipe but--funny!--need those tomatoes.

ours are all done and the plants drying up. We fed the rats very well this year--then fed them poisen.

Please, please, please share your salsa recipe! I have canned a batch, but I am not sure I like the flavor of it...looking for something else! I also canned 3 quarts of tomatoes today, so much easier than making salsa!

3/4 bushel ripe tomatoes, quartered
1 1/2 lb. mixed hot peppers:

11 yellow pointed
7 long green pointed
11 jalapeno

8-10 green peppers
6 T lemon juice
5 large onions
1 c. white vinegar
3 T salt (can use pickling salt)

Simmer or cook. The longer you cook it the thicker it becomes. Put in hot jars and process in a hot water bath for 10 minutes.

(It doesn't say, but you can use a meat grinder to chop up the veggies or can cut them with a knife.)
