    Dinner help, please! How many cups is a "medium" zucchini?

    The recipe calls for a medium zucchini. I am making Zucchini Provencal. Anyone know how many cups that would be? The zucchinis I have are HUGE - from our neighbor's garden.

    Just use half of one if it is huge. You can't convert a medium zucchini into cups.

    A medium would probably give you about 2 cups.

    I would also say a Med Zuc would be 2 cups. I cut up veggies all the time and measure them as I do WW.

    Thanks! I believe I did end up using about 2 cups. It was a great recipe with fresh green peppers, onions, tomatoes, and zucchini from our neighbor's garden (he is so generous!), mixed with garlic, olive oil, salt, and pepper. I topped it off with grated Parmesan and fresh parsley. YUM!!! Both girls took a bite, very reluctantly, and said they did not like it. DH then tried it and said he didn't like it either (he does not like onions). Oh well....more for me I guess. LOL

    Baking needs to be an exact science but cooking doesn't. I always put more of what we like and less or none of what I don't. (I am a recovering picky eater.) I will try anything EXCEPT mushrooms and lamb.
