I don't have a recipe. Can you cut the beef in strips? Add the diced carrots, chopped onions on the bottom of a crock pot, but the beef in, then add some soy sauce and brown sugar for a sauce? Do you have any citrus fruit like oranges, pineapple, grapefruit? That might go nice off the top of my head.

I have a from scratch beef stroganoff recipe that uses stew meat, but it's pretty time consuming.

fried rice! just cook white rice as you normally would. then, fry two eggs and set aside. put the meat and any "hard" veggies you want to use (like asaparagus, broccoli, etc) into the wok/pan and saute. when done (don't overcook the meat, it will continue to steam), add rice, eggs, garlic, carrots and onions (i usually put mine in the food processor), soy sauce, sesame oil and sesame seeds to top. yummy!

If it's stew meat, it will be tough unless you slow cook it. Stew meat is not a good match for stir fry. The crock pot will do well or in beef stock with the carrots and peppers in a dutch oven in the oven.

Here is a quick and easy beef stew recipe....and who says stew has to have potatoes anyway.

    1 tbsp vegetable oil
1lb stewing beef cut into cubes
    1 can tomaote soup
    1 can condensed beef broth
    1 tbsp Worcestershire Sauce
    1 cup water
    veggies of choice.

Brown beef in oil over medium high hear, stir in soup,. broth, water, Worchestershire sauce and veggies. Reduce hear and simmer until beef and vegetables are tender. 30 minutes or longer.

Yes stew meat will be too tough in a stir fry. If you make stew don't forget to brown it beforehand - I dredge in a little flour.
