What's your favorite easy and healthy dinner recipe?

I'm looking for new ideas.

My current favorite is a whole chicken barbecued slowly on the grill (so it's tender), some sliced sourdough bread, and some roasted cauliflower. I toss the cauliflower with a little olive oil and salt, and then roast it in the oven for 40 minutes or so.

I always have a bag of frozen shrimp on hand for nights I need something fast. I just run the shrimp under cold water for a few minutes and then toss in a skillet with some olive oil, garlic and spices for about 5 minutes. Serve over a plate of fresh veggies (or SteamFresh bagged veggies) and a healthy dinner is ready in 10 minutes.
That's my trusted standby, but we also grill a lot. I try to cut up a bunch of veggies at one time (onions too) so I have them ready to go for the week.

Four veggie bolognaise over whole grain pasta with garlic bread and a salad.....
its 1/2lb extra lean beef browned with onions and mushrooms... cauliflower florets and zuchinni 'sticks' next two cans of fire roasted tomatoes...garlic and italian seasonings to taste...simmer while the pasta cooks and the garlic bread bakes...time to plate less than 30 mins! bagged salad rounds it out

If you eat fish...

Steamed Fish (any kind of white filet - catfish, tilapia, etc)

Slice some green onions or chives long length wise (about 2 inches long)
Slice some ginger long length wise (this will help get rid of the fishy smell/flavor)
Sprinkle some salt (not a lot)
Top with a small bit of olive oil

Place in a plate and put in a steamer (could be just a big ole pot with a steam rack) for about 18 minutes (I usually use the filets they sell at Costco) or until it flakes. When ready - pour some soy sauce (usually about 2 tablespoons -but depends if you like it a bit saltier) over it and serve with brown/white rice and steamed veggies.

Easy, convenient, fast, and healthy! (Omega-3 and protein!)

I don't really have a favorite easy recipe. Sometimes I will buy a whole rotisserie chicken and then just make a salad and a side dish to go with it- if we're short on time.
I also keep pre-cooked frozen shrimp in the freezer and can easily toss with any sauce and some rice or pasta. Most of the things I cook are fairly easy and fast though because I get home after 5pm and have to get dinner on the table quickly.

Tacos, any meat, seafood or beans you might have. Total time 20 minutes I have it down to a science, that's a Texan for you!!!

My homemade vegetable soup. Might eat it for a few days. My family requests it all winter long.

In a stockpot:
Brown ground chuck w/chopped onions, & sliced mushrooms
(do not pour out grease)
add:
1 can light kidney beans, or mixed beans (pinto/great northern)
1 pkg. frozen veg. soup mix
1 14oz can petite diced tomatoes in Puree
1 7oz can diced tomatoes w/jalepenos
1 sm. can tomato paste
1 sm. or 7oz. can tomato sauce
fill pot w/water at least twice - 2/3 the height of ingredients for broth
bring to a boil, lower to simmer approx. 2 hrs. on stovetop.

Make macaroni or any small size pasta shape.
Put the noodles in bottom of bowl & cover w/soup.


I make homemade southern cornbread to go w/it.
Pour batter & cook in a (sprayed w/olive oil) cast iron skillet/muffin pan:
@ 500 degrees or until rich golden brown

1 cup of self-rising white cornmeal
1 cup of buttermilk
1/4 cup of oil (any oil on hand/I like to use olive)

butter (optional)
or dip in soup (my dh likes to break his up in soup)
