VERY weird pairing- dessert-

I went to a nice Italian restaurant tonight with an Italian coworker, her brother and his fiance, also Italian. The fiance and brother were talking about wine tastings and olive oil tastings they had been to. They said they had gone to an olive oil tasting that did a a REALLY good olive oil over very good vanilla ice cream and sprinkled with high quality sea salt. My first thought was EWWW gross! But.... they both said it was very good and that they had also had that initial reaction. So, what do you think? I'm getting ready to google it!

Hmmm... Doesn't the oil congeal? That would be yucky.

No, apparently it does not. I have found quite a few things online about it and my brother had also heard of it. I've also found olive oil icecream... apparently that was all the rage a year or two ago. Where was I? Anyway... I would like to try this weird concoction.

I've heard of it but I'm not a big olive oil fan so it doesn't sound appealing to me. Now the crunchy salt on the sweet ice cream . . . THAT sounds good!

I can see how it sounds yucky, but I would be willing to try it. I am guessing is would be just like a very good quality balsamic vinegar and used for finishing.
