ISO: recipes that use peppers

I have some red and green peppers here that are going to need to be used this week sometime but I don't normally cook with peppers except for fajitas. so what else can be done with them?

Wow, just about every meal I make includes peppers. LOL I typically dice them small and include them in every vegetable saute plus chili, salads, beans & rice, pepper steak...

Roast in the oven until soft. Puree and mix with cream cheese (salt & pepper, if you want) and use as a spread/dip.

Use them in the holy trinity as Emeril says. they can be sauted with the onions, carrots and celery. They make a good base for just about anything that needs base flavor.
