in need of crock pot or pressure cooker recipes

Hi! I'm a new mom of twins & we are needing some yummy & easy recipes for my crock pot or my new electric pressure cooker.

I have made pot roast & beef stew. DH is sick of those.. any other ideas? or websites that have good recipes for either of those cookers?

I make Pepper Steak in my PC more often than any other meal. Any top-round recipe works...

This is an ancient one from my grandmother's church cookbook. I modified it for PC. 1 lb. top round beef. Slice it, brown it in the pc, add beef broth, garlic, extra herbs if you like, pressure it for about 15-20 minutes, release the pressure, then add onions & bell peppers, optionally repressure (not too long or you'll have pepper coulis) or just simmer it on the stove top until the veggies are done. Stir in condensed soup and mayo (1:1) and stir. Salt & pepper to taste. Serve over rice or noodles.

www.MissVickie.com is a fabulous resource for learning the ins and outs of pressure cooking and she has lots of recipes. I've learned that most crock pot recipes I've been given can be made in the pressure cooker because they are both wet cooking methods. I made all my twins' baby food in my pressure cooker. LOVE it.

Here's a few crockpot recipes:

CASSEROLE IN THE COOKER


1 package (16 oz) frozen broccoli cuts, thawed and drained
3 cp cubed fully cooked ham
1 can condensed cream of mushroom soup, undiluted
1 jar (8 oz) process cheese sauce
1 cp milk
1 cp uncooked instant rice
1 celery rib, chopped
1 small onion, chopped

In a slow cooker, combine broccoli and ham. Combine the soup, cheese sauce, milk, rice, celery and onion; stir into the broccoli mixture. Cover and cook on low 4-5 hours or until rice is tender.

CROCKPOT CHICKEN AND STUFFING


4 Chicken Breast, Boned and Skinned
4 Slices Swiss Cheese (optional)
1 Can Cream of Chicken soup
1 Can Cream of Mushroom soup
1 Cup water
1/4 Cup Milk
2 Cups Pepperidge Farm Herb Stuffing Mix
1/2 Cup Melted butter
Salt and pepper to taste

Season chicken breasts with salt and pepper and place chicken breasts in crock pot. Pour water over chicken breasts. Put one slice of Swiss cheese on each breast. (You can omit the cheese and it comes out just as good BTW) Combine both cans of soup and milk. Cover chicken breasts with soup mixture. Sprinkle stuffing mix over all. Drizzle melted butter on top. Cook on low for 6-8 hours.

CROCKPOT PEPPER STEAK

1 1/2 lbs. beef round steak -- (1 1/2 to 2)
1/4 cup Soy sauce
1 Clove garlic -- minced
1 teaspoon Sugar
1/2 teaspoon Salt
1/4 teaspoon Pepper
1/4 teaspoon Ground ginger
1 can whole peeled tomatoes, canned
2 green bell pepper -- sliced
1/2 cup water
1 tablespoon cornstarch

cooked rice

Cut beef into 3x1" strips. Put in slow cooker. Combine the next six ingredients; pour over beef. Cover and cook on low for 5-6 hours or until meat is tender. Add tomatoes and green peppers; cook on low for 1 hour longer. Combine the cold water and cornstarch to make a paste; stir into liquid in slow cooker and cook on high until thickened. Serve over rice.

SLOW COOKER SCALLOPED POTATOES AND HAM

Ingredients
3 lb. medium size potatoes, peeled and sliced
2 onions, chopped
1 c. shredded Cheddar cheese
1 1/2 c. chopped cooked ham
1 can cream of mushroom soup
1/2 c. water (I found I needed to add more water than called for)


Directions
Combine potatoes, onions, cheese and ham in slow cooker. Stir together the soup and water in a small bowl, mixing well. Pour soup over potato mixture. Cover pot.

Cook on high for 4 hours or until potatoes are tender. Stir before serving.


SLOW 'N EASY STROGANOFF
2 to 3 pounds round steak cut in 1/2 to 1-inch slices
1 package beefy onion soup mix (Lipton)
1 can golden mushroom soup
1 can tomato soup
8 ounces or more fresh mushrooms, thickly sliced (or canned mushrooms)
8 ounces light sour cream
Combine steak slices, soup mix, and soups in the Crock Pot; stir. Cover and cook on low for 8 to 10 hours. Add sour cream during the last 20 minutes. Serve over egg noodles.
Serves 6 to 8.

Crockpot Salsa Chicken

chicken breasts (boneless or bone in)
jar of salsa
can of black beans, rinsed
can of corn (or 2 cups frozen)

Toss in the crockpot & cook 4-6 hrs
Take the chicken out, shred it and put back in the pot

Use for tacos/burritos or serve over rice.

The crockpot is a lifesaver with a baby!

Here's one that I make every few weeks. My 14 month old loves it!

Sausage and Lentil Stew

8 oz lentils (1/2 package)--do not soak
1 pound of kielbasa or turkey kielbasa sausage--slice into 1/4 inch pieces
1 14 oz can diced tomatoes--undrained
1.5 cups water
3 chopped carrots
3 stalk chopped celery
1 14 oz can beef broth
minced garlic to taste

Combine all ingredients in slow cooker and cook on high for 3 hours or low for 6-7 hours. May need to add additional water.


Also, I have the Fix-It and Forget-It cookbook--there are some really great recipes in there.

My favorite super-easy slow cooker recipe:

chicken breasts
Italian dressing (~ half a bottle)

Amazingly delicious!

Creamy Chicken
2-3 potatoes
1 lb carrots
chicken breasts
cr of mushroom soup
cr of chicken soup


Place potatoes on bottom of crockpot with carrots on top. Place chicken breasts on top and cover with soups. Cook on low for 10hrs.

Braised Beef Tips
2-3 lbs lean stew beef
1 can cr of mushroom soup
1 can cr of celery soup
1 can cr of chicken soup
4 oz can mushrooms, drained
1/2 pkg dry onion soup mix
rice/noodles
chow mein noodles


Place meat in heavy roaster or dutch oven. Add soups, mushrooms, and dry soup mix. Cover and bake at 275 for 3hrs. Serve over hot noodles or rice and top with chow mein noodles.
(I personally use the slow-cooker and cook for 8hrs.)
