I make Pepper Steak in my PC more often than any other meal.

Any top-round recipe works...
This is an ancient one from my grandmother's church cookbook. I modified it for PC. 1 lb. top round beef. Slice it, brown it in the pc, add beef broth, garlic, extra herbs if you like, pressure it for about 15-20 minutes, release the pressure, then add onions & bell peppers, optionally repressure (not too long or you'll have pepper coulis) or just simmer it on the stove top until the veggies are done. Stir in condensed soup and mayo (1:1) and stir. Salt & pepper to taste. Serve over rice or noodles.

I've learned that most crock pot recipes I've been given can be made in the pressure cooker because they are both wet cooking methods. I made all my twins' baby food in my pressure cooker. LOVE it.
