    Can I make chicken noodle soup with boneless, skinless chicken breasts?

    I have lots of frozen chicken breasts in the freezer and would like to make soup. Do I need to go buy some chicken stock ? Does anyone have a simple, good recipe?

    Sure, you can use chicken breasts, but I would put them in at the end and not let them cook all day. Do you also have some chicken with bones in? If not, buy a good chicken stock at the store. I don't have a recipe. I would saute some carrots, onions and celery. Season as you like it and then start adding chicken stock. Continue to add things and taste. Eventually, add the chicken pieces, and finally, the noodles. You can cook the noodles in the soup toward the end.

    I use them all the time. I cook them first and then add them at the end.

    How do I make a vegetable stock? I have celery, onions and carrots.

    I make a simple, fast chicken noodle soup about once a week for one of my DDs. This makes a small quantity, no measures are exact.
    Saute shredded carrot (I buy them for my salads), thin sliced celery & minced onion in a small amt of olive oil until softened. Add broth and diced cooked chicken. Sprinkle in some parsley flakes. Bring to a boil and reduce to a simmer for 10-15 minutes. Return to full boil, add noodles and boil 7-10 minutes. Add salt & pepper (optional) to taste.
