    Tuna cakes

    Hmm. I've never made them with tuna but I do with canned salmon. I don't have exact measurements but I treat them a lot like a meatloaf/meatball mix. I combine minced onion, egg, salmon, kosher salt and bread crumbs, then form patties. I found fresh bread crumbs do a nicer job, but the canned dry crumb works too. I usually dry-fry them in a non-stick skillet or throw them on the George Foreman grill. Makes for a fast & easy meal w/boxed mac'n'cheese.

    I create my own too, similar to Janet's, but use dry bread crumbs because I'm lazy. I also like tuna calzones, which sounds really gross, but they're quite tasty.

    I do the same thing- but use salmon also. Take the bones and skin out of the salmon (the tall can of pink salmon)- but don't go nuts as it's VERY hard to get them all and they are edible. I usually finely chop a small onion and saute it first. I add that, an egg, bread crumbs or cracker crumbs, and a dash of any spice that interest me at the moment, maybe a squirt of ketchup, and so on. Form into patties and fry in a skillet in a small bit of oil. Flip- continue until nicely golden brown on each side.

    Let's try this... Are you using canned tuna?

    If so, I'd guess 2 or 3 cans would be the equivalent of one can of salmon. (You'd have to check)
    One quarter to one half of a sweet onion, minced.
    2 or 3 slices of bread (I used whole wheat because that's what I had) OR
    1/2 c. bread crumbs (keep more nearby in case you need it)
    1 egg

    When I made it last, I used a food processor for the bread crumbs then tossed those into a bowl. Then I minced the onion in the f.p. and added the salmon (bones and all) (or tuna which has no bones). I added the egg and the bread crumb back into the f.p. and pulsed it a few times. (Seriously I pulsed it too long and made salmon mousse cakes, but if you're careful that might not happen. And if you do it by hand, you won't have this issue at all.)

    I add a dash or two of Worcestershire sauce, and about 1/4tsp of dry mustard, too. I use cornmeal with a tiny bit of flour instead of bread crumbs. I just might have to make some of these now that you've reminded me of them. I haven't made them in years, I wonder if the boys would eat them.....hmmmmm
